Baby recipe: Tuna, peas, corn and diced red capsicum with rice

A tasty "one pot" dish for littlies that looks delicious too. This recipe is from What Do I Feed My Baby? by Leanne Cooper.

Ingredients:

1 cup of rice, ½ tin of tuna (in water), ¼ cup of peas and the same of corn and red capsicum.

The quick method is to add all to a rice cooker with the relevant amount of water and serve when ready. (If you don't have a rice cooker, use a steamer or small pot and cook all ingredients until soft.)

You can cook a number of meals this way but ensure that if you are cooking meat in a rice-cooker that it is in very small pieces so that it cooks thoroughly. Vary the vegetable choice; for example, try potato, swede, pumpkin or canned tuna. You can also vary the fish by using mackerel, salmon, herring etc which are all rich sources of omega-3.
